Recipe of the Week!

Quinoa Stuffed Portobello Mushrooms
I told you in my last recipe that I had a recipe for a hot quinoa dish. Well here ya go. I think it turned out pretty good, and surprisingly Matt loved these. They were pretty easy to make too. Enjoy!

Ingredients:
6 Portobello Sliders (I'm sure you could use 2-4 regular sized mushrooms too)
1 cup quinoa (uncooked)
3 handfuls of fresh spinach
2 roma tomatos diced
goat cheese
olive oil
balsamic vinegar
salt and pepper

Directions:
Marinate portobellos in olive oil and vinegar for an hour or two before beginning this recipe. Once the mushrooms are marinated roast in the over for 10-15 minutes. Meanwhile cook quinoa according to the directions on the package. Once quinoa is cooked through add olive oil, salt, and pepper to taste. Add spinach and tomatoes to quinoa and mix together. Remove the mushrooms from the oven and top with quinoa mixture. Sprinkle goat cheese on top. Place back in the oven for about 3 minutes. Yay!
